By replacing the lard typically used in traditional recipes with vegetable oil, and omitting any animal-derived products, this version retains the cherished flavors and textures while being entirely plant-based. Wrapped in corn husks and steamed to perfection, each bite of these Vegan Humitas unfolds with the sweetness of fresh corn combined with the aromatics of onion, garlic, and spices. This recipe not only pays homage to its cultural roots but also respects modern dietary preferences, making it a perfect dish for everyone to enjoy.

    Ingredients

    • 1 cup diced onions
    • 2 cloves garlic, minced
    • 2 tablespoons vegetable oil
    • 1 teaspoon salt
    • 1/2 teaspoon paprika
    • 1/4 teaspoon cumin
    • Corn husks for wrapping
    • Fresh cilantro for garnish

    Steps:

    1. Grate the corn cobs to extract the pulp.
    2. Heat the vegetable oil in a pan over medium heat. Add onions and garlic, sautéing until soft.
    3. Mix the sautéed onions and garlic with the corn pulp, salt, paprika, and cumin.
    4. Place a spoonful of the mixture onto a corn husk, fold the sides, and then tie with a strip of husk to secure.
    5. Steam the wrapped humitas for about 50 minutes.
