Recipe Description
Spicy, smoky, and utterly savory, these Vegan Jerk Mushroom Wraps are packed with flavorful mushrooms seasoned with traditional jerk spices, all wrapped up in a soft tortilla. A perfect meal for any day of the week, offering a plant-power twist on Caribbean cuisine.
Ingredients
- 2 tablespoons olive oil
- 1 pound oyster mushrooms, shredded
- 1 tablespoon jerk seasoning
- 1 teaspoon soy sauce
- 1 small red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 large tortillas
- 1 avocado, sliced
- 1/4 cup vegan mayonnaise
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup arugula
Steps:
- Heat olive oil in a large skillet over medium-high heat.
- Add mushrooms and cook until browned, about 5-7 minutes.
- Stir in jerk seasoning and soy sauce, cooking for an additional 2 minutes.
- Remove mushrooms from skillet and set aside.
- In the same skillet, add a little more oil if needed, then add sliced onion and bell pepper. Sauté until tender, about 3-4 minutes.
- In a small bowl, mix vegan mayonnaise with lime juice, salt, and pepper.
- Spread the mayonnaise mixture over each tortilla.
- Top with sautéed onions and bell peppers, jerk mushrooms, avocado slices, and arugula.
- Fold wraps and serve immediately.
