Recipe Description

Spicy, smoky, and utterly savory, these Vegan Jerk Mushroom Wraps are packed with flavorful mushrooms seasoned with traditional jerk spices, all wrapped up in a soft tortilla. A perfect meal for any day of the week, offering a plant-power twist on Caribbean cuisine.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound oyster mushrooms, shredded
  • 1 tablespoon jerk seasoning
  • 1 teaspoon soy sauce
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 large tortillas
  • 1 avocado, sliced
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup arugula

Steps:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add mushrooms and cook until browned, about 5-7 minutes.
  3. Stir in jerk seasoning and soy sauce, cooking for an additional 2 minutes.
  4. Remove mushrooms from skillet and set aside.
  5. In the same skillet, add a little more oil if needed, then add sliced onion and bell pepper. Sauté until tender, about 3-4 minutes.
  6. In a small bowl, mix vegan mayonnaise with lime juice, salt, and pepper.
  7. Spread the mayonnaise mixture over each tortilla.
  8. Top with sautéed onions and bell peppers, jerk mushrooms, avocado slices, and arugula.
  9. Fold wraps and serve immediately.
