    Recipe Description

    Vegan Karask is a delightful spin on the traditional Estonian barley bread. This recipe substitutes dairy and eggs with vegan-friendly alternatives while retaining the authentic, hearty texture and slightly sweet, comforting flavor that Karask is known for. Enjoy this simple, wholesome bread as part of your brunch spread or alongside your favorite Vegan soup.

    Ingredients

    • 2 cups barley flour
    • 1/2 cup wheat flour
    • 1 cup soy milk
    • 2 tbsp maple syrup
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 2 tbsp vegetable oil
    • 1 tbsp apple cider vinegar

    Steps:

    1. Preheat oven to 375°F (190°C).
    2. Mix the dry ingredients in a large bowl.
    3. Combine soy milk, maple syrup, oil, and apple cider vinegar in another bowl.
    4. Mix wet ingredients into dry until just combined.
    5. Pour batter into a greased loaf pan.
    6. Let it cool before slicing.
