    Ingredients

    • 1 small onion, chopped
    • 3 cloves garlic, minced
    • 1 tablespoon grated ginger
    • 2 tablespoons vegan Khao Soi paste
    • 400ml can coconut milk
    • 2 cups vegetable broth
    • 2 tablespoons soy sauce
    • 1 tablespoon maple syrup
    • 200g tofu or tempeh, cubed

    Steps:

    1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until tender.
    2. Stir in vegan Khao Soi paste and cook for a minute until fragrant.
    3. Pour in coconut milk, vegetable broth, soy sauce, and maple syrup. Bring to a simmer.
    4. Add tofu or tempeh cubes to the pot. Reduce heat to low and simmer for 20 minutes.
    5. Meanwhile, prepare rice noodles according to package instructions.
