These Vegan Korokke are a delightful and compassionate twist on the traditional Japanese croquettes. Ingredients
- 2 cups mashed potatoes
- 1 cup diced carrots
- 1 cup green peas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- Salt and pepper to taste
- 1 cup wheat flour for dusting
- 2 tbsp cornstarch mixed with 4 tbsp water
- 2 cups panko breadcrumbs
- Oil for frying
- Vegan mayonnaise for serving
Steps:
- Heat a skillet over medium heat and add a splash of oil.
- Sauté onion and garlic until translucent.
- Add carrots and peas, cook for 5 minutes, or until soft.
- Mix in the mashed potatoes, curry powder, salt, and pepper.
- Form into oval shapes, then chill in the refrigerator for 30 minutes.
- Roll each korokke in flour, dip into cornstarch mixture, then coat in breadcrumbs.
- Heat oil in a deep pan and fry each korokke until golden brown, about 3-4 minutes per side.
- Drain on paper towels and serve hot with vegan mayonnaise.
