Recipe Description

These Vegan Korokke are a delightful and compassionate twist on the traditional Japanese croquettes. Rich in flavor, these croquettes feature a crisp exterior encasing a smooth, creamy mixture of mashed potatoes and finely diced vegetables, accented with a hint of curry flavor. Ingredients

  • 2 cups mashed potatoes
  • 1 cup diced carrots
  • 1 cup green peas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • Salt and pepper to taste
  • 1 cup wheat flour for dusting
  • 2 tbsp cornstarch mixed with 4 tbsp water
  • 2 cups panko breadcrumbs
  • Oil for frying
  • Vegan mayonnaise for serving

Steps:

  1. Heat a skillet over medium heat and add a splash of oil.
  2. Sauté onion and garlic until translucent.
  3. Add carrots and peas, cook for 5 minutes, or until soft.
  4. Mix in the mashed potatoes, curry powder, salt, and pepper.
  5. Form into oval shapes, then chill in the refrigerator for 30 minutes.
  6. Roll each korokke in flour, dip into cornstarch mixture, then coat in breadcrumbs.
  7. Heat oil in a deep pan and fry each korokke until golden brown, about 3-4 minutes per side.
  8. Drain on paper towels and serve hot with vegan mayonnaise.
