Recipe Description

A delightful twist on traditional Sambusa, this Vegan Lentil Sambusa Pie is filled with aromatic lentils and spices, wrapped in a flaky pastry. Perfect for those who love bold Ethiopian flavors.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cardamom
  • 1 cup red lentils
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 1 package of vegan puff pastry, thawed

Steps:

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until soft.
  3. Stir in the cumin, coriander, and cardamom. Cook for 1 minute until fragrant.
  4. Add the red lentils and vegetable broth. Bring to a boil, then lower the heat and simmer for 20-25 minutes, or until the lentils are tender. Season with salt and pepper.
  5. Roll out the puff pastry and place it in a pie dish.
  6. Bake for 35-40 minutes, or until the pastry is golden and crisp.
  7. Let it cool for a few minutes before slicing and serving.
