Recipe Description
A delightful twist on traditional Sambusa, this Vegan Lentil Sambusa Pie is filled with aromatic lentils and spices, wrapped in a flaky pastry. Perfect for those who love bold Ethiopian flavors.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cardamom
- 1 cup red lentils
- 2 cups vegetable broth
- Salt and pepper to taste
- 1 package of vegan puff pastry, thawed
Steps:
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until soft.
- Stir in the cumin, coriander, and cardamom. Cook for 1 minute until fragrant.
- Add the red lentils and vegetable broth. Bring to a boil, then lower the heat and simmer for 20-25 minutes, or until the lentils are tender. Season with salt and pepper.
- Roll out the puff pastry and place it in a pie dish.
- Bake for 35-40 minutes, or until the pastry is golden and crisp.
- Let it cool for a few minutes before slicing and serving.
