    Ingredients

    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 2 tablespoons olive oil
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1/4 teaspoon cinnamon
    • 1 can (14 oz) diced tomatoes
    • 4 cups vegetable broth
    • Salt and pepper to taste

    Steps:

    1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until softened.
    2. Add the spices and cook for another minute until fragrant.
    3. Stir in the soaked and drained white beans, diced tomatoes, and vegetable broth. Bring to a boil.
