- 500g fresh spinach leaves, washed and chopped
- 4 cloves garlic, minced
- 200g tofu, pressed and crumbled
- 2 tablespoons nutritional yeast
- 1 teaspoon paprika
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon juice for serving
Steps:
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sautéing until soft and fragrant.
- Add the crumbled tofu, paprika, and nutritional yeast, cooking for a few minutes until the tofu is lightly browned.
- Stir in the chopped spinach, season with salt and pepper, and cook until the spinach has wilted.
- Serve hot with a squeeze of lemon juice.
