Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cornstarch for dusting
  • Optional fillings: vegan red bean paste, coconut flakes

Steps:

  1. In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth.
  2. Stir in vanilla extract.
  3. Cover the bowl with plastic wrap loosely. Microwave on high for 1 minute, stir, and then microwave for another minute. Repeat this process until the mixture becomes sticky and fully translucent.
  4. Dust a clean surface with cornstarch. Spoon the hot mochi mixture onto the surface. Dust the top of the mochi with more cornstarch.
  5. When cool enough to handle, flatten the mochi and cut into pieces, or shape as desired. If adding fillings, place a small amount in the center of each piece, then seal and shape.
