Ingredients
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 1 cup water
- 1/2 teaspoon vanilla extract
- 1/4 cup cornstarch for dusting
- Optional fillings: vegan red bean paste, coconut flakes
Steps:
- In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth.
- Stir in vanilla extract.
- Cover the bowl with plastic wrap loosely. Microwave on high for 1 minute, stir, and then microwave for another minute. Repeat this process until the mixture becomes sticky and fully translucent.
- Dust a clean surface with cornstarch. Spoon the hot mochi mixture onto the surface. Dust the top of the mochi with more cornstarch.
- When cool enough to handle, flatten the mochi and cut into pieces, or shape as desired. If adding fillings, place a small amount in the center of each piece, then seal and shape.
