Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 zucchinis, cubed
- 1 cup chickpeas, cooked
- 1/2 cup dried apricots, chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
Steps:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add carrots and zucchini, cook for 5 minutes.
- Stir in chickpeas and apricots, cook for another 5 minutes.
- Add cumin, coriander, cinnamon, salt, and pepper, stir to coat vegetables.
- Pour in vegetable broth, bring to a boil. Reduce heat and cover, simmer for 30 minutes.
- Garnish with fresh cilantro before serving.
