    Ingredients

    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 2 carrots, sliced
    • 2 zucchinis, cubed
    • 1 cup chickpeas, cooked
    • 1/2 cup dried apricots, chopped
    • 2 teaspoons ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon cinnamon

    Steps:

    1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
    2. Add carrots and zucchini, cook for 5 minutes.
    3. Stir in chickpeas and apricots, cook for another 5 minutes.
    4. Add cumin, coriander, cinnamon, salt, and pepper, stir to coat vegetables.
    5. Pour in vegetable broth, bring to a boil. Reduce heat and cover, simmer for 30 minutes.
    6. Garnish with fresh cilantro before serving.
