Nigerian Akara are tasty vegan bean cakes made from blended black-eyed peas mixed with spices, then deep-fried until crispy.
Ingredients
- 1 onion, chopped
- 1 red bell pepper, deseeded and chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cayenne pepper
- Salt to taste
- Vegetable oil for frying
Steps:
- Blend the soaked black-eyed peas with onion, bell pepper, garlic, cayenne pepper, and salt to a smooth paste.
- Heat the oil in a deep fryer or large skillet to 350°F (175°C).
- Scoop the batter into the oil in spoonfuls, and fry until the akara are golden brown and crispy.
- Drain on paper towels and serve hot.
