    Recipe Description

    Nigerian Akara are tasty vegan bean cakes made from blended black-eyed peas mixed with spices, then deep-fried until crispy.

    Ingredients

    • 2 cups of black-eyed peas, soaked overnight
    • 1 onion, chopped
    • 1 red bell pepper, deseeded and chopped
    • 2 cloves of garlic, minced
    • 1 teaspoon of cayenne pepper
    • Salt to taste
    • Vegetable oil for frying

    Steps:

    1. Blend the soaked black-eyed peas with onion, bell pepper, garlic, cayenne pepper, and salt to a smooth paste.
    2. Heat the oil in a deep fryer or large skillet to 350°F (175°C).
    3. Scoop the batter into the oil in spoonfuls, and fry until the akara are golden brown and crispy.
    4. Drain on paper towels and serve hot.
