Ingredients
- 1 cup grated carrot
- 1 cup sweet corn kernels
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 cup chickpea flour
- 1/4 cup all-purpose flour (use gluten-free flour for a GF option)
- 1/2 teaspoon baking powder
- 1 teaspoon cumin
- 1 teaspoon paprika Salt and pepper to taste
Steps:
- Your choice of vegan dip or sauce for serving
- In a large mixing bowl, combine the grated zucchini, grated carrot, sweet corn kernels, chopped onion, and minced garlic.
- Add the chickpea flour, all-purpose flour, baking powder, cumin, paprika, salt, and pepper to the vegetable mixture. Stir until well combined. If the mixture feels too dry, add a little water to reach a dough-like consistency.
- Heat olive oil in a large skillet over medium heat. Form the mixture into small patties and flatten slightly.
- Fry the fritters in batches, cooking each side for 2-3 minutes or until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.
