    Vegan Pav Bhaji is a delightful medley of vegetables cooked in a tomato base and delicately spiced to recreate the classic Indian street food experience. Ideal for feeding a crowd, this aromatic and savory dish pairs with soft, buttered bread rolls, offering a satisfying crunch with every bite. A perfect combination of taste and texture, this bhaji is simmered to perfection, allowing flavors to meld beautifully for a captivating vegan feast.

    Ingredients

    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1 inch ginger, minced
    • 2 green chilies, finely chopped
    • 1/2 cup green peas
    • 2 large potatoes, boiled and mashed
    • 1/2 cup chopped cauliflower
    • 1/2 cup chopped carrots
    • 1/2 cup chopped bell peppers

    Steps:

    1. Heat vegan butter in a large pan.
    2. Add onions, garlic, ginger, and green chilies, and sauté until onions are translucent.
    3. Add the tomatoes and cook until soft.
    4. Incorporate peas, cauliflower, carrots, and bell peppers, cooking each addition for a few minutes.
    5. Add potatoes, pav bhaji masala, turmeric, chili powder, and salt. Mix well.
    6. Garnish with coriander and lemon juice.
    7. Serve hot with lightly toasted vegan pav.
