Ingredients
- 2 tbsp vegan butter
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 green chilies, finely chopped
- 1/2 cup green peas
- 2 large potatoes, boiled and mashed
- 1/2 cup chopped cauliflower
- 1/2 cup chopped carrots
- 1/2 cup chopped bell peppers
- 1 cup chopped tomatoes
- 2 tbsp pav bhaji masala
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
Steps:
- Heat vegan butter in a large pan.
- Add onions, garlic, ginger, and green chilies, and sauté until onions are translucent.
- Add the tomatoes and cook until soft.
- Incorporate peas, cauliflower, carrots, and bell peppers, cooking each addition for a few minutes.
- Add potatoes, pav bhaji masala, turmeric, chili powder, and salt. Mix well.
- Garnish with coriander and lemon juice.
- Serve hot with lightly toasted vegan pav.
