Crispy on the outside, tender on the inside, these Vegan Potato Pancakes are a delightful treat. Grated potatoes are mixed with flour and spices, then fried to golden perfection. Serve with apple sauce or vegan sour cream for the ultimate experience.
Ingredients
- 4 large potatoes, grated
- 1 medium onion, grated
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Steps:
- Place the grated potatoes and onion in a clean cloth and squeeze out as much liquid as possible.
- Transfer the mixture to a bowl. Add the flour, baking powder, salt, and pepper. Mix well to combine.
- Heat a thin layer of oil in a pan over medium heat.
- Scoop a heaping tablespoon of the potato mixture into the pan, flattemand cook until the edges are crispy and golden, about 4-5 minutes. Flip and cook the other side.
- Repeat with the remaining mixture, adding more oil as needed.
