A delectable vegan twist on the classic BBQ pulled pork, using young green jackfruit that shreds beautifully to mimic the texture of pork. Seasoned with a rich, smoky sauce, it’s a perfect addition to sandwiches, tacos, or served over rice.
Ingredients
- 2 cans young green jackfruit in water, drained and rinsed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1 cup BBQ sauce
- 1/2 cup vegetable broth
Steps:
- Preheat oven to 400°F (200°C).
- Sauté onion and garlic in olive oil until translucent.
- Add jackfruit, spices, and stir to combine.
- Add BBQ sauce and vegetable broth, mix well.
- Transfer to a baking dish and bake for 45-60 minutes, or until the jackfruit is tender and the sauce has thickened.
- Serve on buns with coleslaw or as desired.
