A delectable vegan twist on the classic BBQ pulled pork, using young green jackfruit that shreds beautifully to mimic the texture of pork. Seasoned with a rich, smoky sauce, it’s a perfect addition to sandwiches, tacos, or served over rice.

Ingredients

  • 2 cans young green jackfruit in water, drained and rinsed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1 cup BBQ sauce
  • 1/2 cup vegetable broth

Steps:

  1. Preheat oven to 400°F (200°C).
  2. Sauté onion and garlic in olive oil until translucent.
  3. Add jackfruit, spices, and stir to combine.
  4. Add BBQ sauce and vegetable broth, mix well.
  5. Transfer to a baking dish and bake for 45-60 minutes, or until the jackfruit is tender and the sauce has thickened.
  6. Serve on buns with coleslaw or as desired.
