Ingredients
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1 teaspoon of pumpkin pie spice
- 1 cup of pumpkin puree
- 1/4 cup of vegetable oil
- 1/4 cup of almond milk
- 1/4 cup of maple syrup
Steps:
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a large bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
- In another bowl, mix the pumpkin puree, vegetable oil, almond milk, and maple syrup until well combined.
- Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
- Serve warm or at room temperature.
