Ingredients

  • 2 cups of all-purpose flour
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of pumpkin pie spice
  • 1 cup of pumpkin puree
  • 1/4 cup of vegetable oil
  • 1/4 cup of almond milk
  • 1/4 cup of maple syrup

Steps:

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, mix the pumpkin puree, vegetable oil, almond milk, and maple syrup until well combined.

  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
