    Recipe Description

    These delightful vegan pumpkin puffs are light, fluffy, and packed with the warm flavors of pumpkin and spices, making them a fantastic treat for fall gatherings and holiday celebrations.

    Ingredients

    • 2 cups of all-purpose flour
    • 1 tablespoon of baking powder
    • 1/2 teaspoon of salt
    • 1 teaspoon of pumpkin pie spice
    • 1 cup of pumpkin puree
    • 1/4 cup of vegetable oil
    • 1/4 cup of almond milk
    • 1/4 cup of maple syrup

    Steps:

    1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
    2. In a large bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
    3. In another bowl, mix the pumpkin puree, vegetable oil, almond milk, and maple syrup until well combined.
    4. Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
    5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
    6. Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
    7. Serve warm or at room temperature.
