    Ingredients

    • 1 cup of green lentils
    • 2 tablespoons olive oil
    • 2 teaspoons ras el hanout
    • 1 teaspoon ground turmeric
    • 1/2 teaspoon fenugreek seeds
    • 1 pinch of saffron
    • Salt and pepper to taste
    • 4 pieces of msimen (Moroccan flatbread)
    • 4 cups of vegetable broth

    Steps:

    1. Prepare the vegetables by cutting them into bite-sized pieces.
    2. In a large pot, heat the olive oil over medium heat. Add the mixed vegetables and sauté until they start to soften.
    3. Add the lentils to the pot along with ras el hanout, turmeric, fenugreek seeds, and saffron. Stir well to coat everything in the spices.
    4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer until the lentils are tender and the vegetables are cooked through, about 40 minutes.
    5. Taste and adjust seasoning with salt and pepper.
    6. To serve, place pieces of msimen in each bowl and ladle the vegetable and lentil stew over the bread. Garnish with chopped cilantro. Serve immediately.
