Recipe Description

Ingredients
- 400g green beans, trimmed
- 2 tablespoons olive oil
- 1 red onion, finely sliced
- 2 cloves garlic, minced
- 2 tablespoons vinegar
- 1 tablespoon mustard
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Steps:
- Boil green beans in salted water for 3-5 minutes until tender but crisp. Drain and rinse under cold water.
- In a frying pan, heat olive oil over medium heat. Add red onion and garlic, and sauté until soft.
- In a large bowl, whisk together vinegar and mustard. Add green beans, sautéed onion and garlic. Toss well.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
