Recipe Description

A refreshing and vibrant green bean salad perfect for any occasion. This vegan version maintains the traditional flavors while ensuring a healthy and guilt-free experience.

Ingredients

  • 400g green beans, trimmed
  • 2 tablespoons olive oil
  • 1 red onion, finely sliced
  • 2 cloves garlic, minced
  • 2 tablespoons vinegar
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Steps:

  1. Boil green beans in salted water for 3-5 minutes until tender but crisp. Drain and rinse under cold water.
  2. In a frying pan, heat olive oil over medium heat. Add red onion and garlic, and sauté until soft.
  3. In a large bowl, whisk together vinegar and mustard. Add green beans, sautéed onion and garlic. Toss well.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh parsley before serving.
