Ingredients
- 1/2 cup plant-based milk, warmed
- 1/4 cup vegan butter, melted
- 1/4 cup granulated sugar
- 2 teaspoons active dry yeast
- 1/2 teaspoon salt
- 1 cup fruit jam for filling
- Vegetable oil for frying
- Extra granulated sugar for coating
Steps:
- 1. In a large mixing bowl, combine the warmed plant-based milk, sugar, and yeast. Allow to sit for 5 minutes until frothy.
- 2. Add the flour, melted vegan butter, and salt to the yeast mixture. Mix until a soft dough forms.
- 3. Knead the dough on a lightly floured surface for about 8 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- 4. Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough into 8 equal pieces and shape each into a ball. Flatten slightly and spoon a heaping teaspoon of jam into the center of each. Fold the dough over the filling and seal the edges. Form back into a ball shape, ensuring the jam is completely enclosed.
- 5. Place the filled dough balls on a baking sheet, cover lightly with a towel, and let rise for another 30 minutes.
- 7. While still warm, roll the fried Berliners in granulated sugar to coat. Let cool slightly before serving.
