- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 2 cups vegetable broth
- 2 cups diced tomatoes
- 1 cup natural peanut butter
- 3 cups diced sweet potatoes
- 2 cups chopped kale
- Salt and pepper to taste
Steps:
- In a large pot, heat the oil over medium heat and sauté the onion, garlic, and ginger until soft.
- Add the cumin, coriander, and cayenne pepper, stirring until fragrant.
- Pour in the vegetable broth and diced tomatoes, bringing to a simmer.
- Stir in the peanut butter until well combined, then add the sweet potatoes and cook until tender, about 30 minutes.
- Add the kale, cooking until wilted, and season with salt and pepper.
