Ingredients

  • 200g soba noodles
  • 200g firm tofu
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • 2 tbsp sesame seeds
  • 2 green onions, chopped

Steps:

  1. Cook soba noodles according to package instructions, then drain and set aside.
  2. Cut tofu into cubes and pat dry with a paper towel to remove excess moisture.
  3. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add tofu cubes and pan-fry until golden and crispy on all sides, about 8-10 minutes.
  4. In a bowl, whisk together soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and the remaining tablespoon of sesame oil.
  5. In a large mixing bowl, combine cooked soba noodles, crispy tofu, and the sauce. Toss to coat evenly.
