  • 2 cups sushi rice
  • 4 cups water
  • 1 lb shiitake mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 2 teaspoons sugar
  • 4 green onions, sliced
  • Pickled ginger, for serving

Steps:

  1. Rinse the sushi rice until the water runs clear, then combine with water in a rice cooker and cook.
  2. Clean and slice the shiitake mushrooms.
  3. In a pan, combine soy sauce, mirin, sake, and sugar. Bring to a simmer.
  4. Add the shiitake mushrooms to the pan and cook until tender.
  5. Serve the cooked shiitake mushrooms over the steamed rice.
