Ingredients
- 200g soba noodles
- 1 large carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 3 spring onions, sliced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sesame seeds
- For the dressing:
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
Steps:
- Cook soba noodles according to package instructions, then rinse under cold water and drain.
- In a large bowl, combine cooked noodles, carrot, bell pepper, cucumber, spring onions, and cilantro.
- In a small bowl, whisk together the ingredients for the dressing: soy sauce, sesame oil, rice vinegar, maple syrup, minced garlic, and grated ginger.
- Pour the dressing over the salad and toss until everything is well coated.
