    Ingredients

    • 1 cup raw cashews, soaked for 4 hours or boiled for 10 minutes and drained
    • 2 cups fresh spinach, chopped

    • 1 1/2 cups water
    • 1/4 cup nutritional yeast
    • 2 tablespoons lemon juice
    • 2 cloves garlic
    • 1 teaspoon onion powder
    • 1 teaspoon mustard (Dijon or yellow)

    Steps:

    1. Prepare the Pasta: Cook the macaroni according to package instructions until al dente. Drain and return to the pot. Stir in olive oil or vegan butter to prevent sticking. Set aside.
    2. Make the Cheese Sauce: In a high-speed blender, combine the soaked and drained cashews, water, nutritional yeast, carrot, lemon juice, garlic, onion powder, salt, smoked paprika, and turmeric. Blend on high until the mixture is completely smooth and creamy. Taste and adjust seasoning if necessary.
    3. Combine Macaroni and Cheese Sauce: Pour the cheese sauce over the cooked macaroni in the pot. Stir well to ensure all the pasta is evenly coated with the sauce. Heat over low heat for a few minutes to warm through, stirring occasionally.
    4. Prepare the Breadcrumb Topping (Optional): In a small skillet, toast the breadcrumbs over medium heat with a drizzle of olive oil and a pinch of salt until golden and crispy. Stir frequently to prevent burning.
