    Recipe Description

    Vegan Stovies is a warming Scottish dish traditionally made with potatoes and onions. This vegan version replaces the meat with hearty root vegetables and lentils, simmering them in a flavorful broth until tender. It’s a cozy, comforting meal perfect for chilly evenings, combining rich flavors and simple, nutritious ingredients.

    Ingredients

    • 3 large potatoes, peeled and diced
    • 2 carrots, peeled and diced
    • 1 onion, thinly sliced
    • 2 cloves garlic, minced
    • 1 cup cooked green lentils
    • 4 cups vegetable broth
    • 1 tbsp vegetable oil
    • 1 tsp thyme
    • Salt and pepper to taste

    Steps:

    1. Heat oil in a large pot over medium heat.
    2. Add onions and garlic, cooking until soft.
    3. Add potatoes and carrots, cook for 5 minutes.
    4. Pour in vegetable broth, bring to a boil then simmer for 30 minutes.
    5. Stir in cooked lentils, thyme, salt, and pepper.
    6. Check seasoning and serve hot.
