Recipe Description
A comforting and flavorful tomato soup, featuring ripe tomatoes and aromatic basil, transformed into a vegan delight. Perfect for a cozy winter meal or a refreshing summer treat.
Ingredients
- 1 kg ripe tomatoes, peeled and chopped
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and fresh ground pepper to taste
- 4 cups of vegetable stock
- Fresh basil leaves for garnish
Steps:
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until soft.
- Add the chopped tomatoes, sugar, salt, and pepper. Cook for a few minutes until the tomatoes are soft.
- Add the vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes.
- Use an immersion blender to blend the soup until smooth.
- Serve hot, garnished with fresh basil leaves.
