Recipe Description

A comforting and flavorful tomato soup, featuring ripe tomatoes and aromatic basil, transformed into a vegan delight. Perfect for a cozy winter meal or a refreshing summer treat.

Ingredients

  • 1 kg ripe tomatoes, peeled and chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • Salt and fresh ground pepper to taste
  • 4 cups of vegetable stock
  • Fresh basil leaves for garnish

Steps:

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until soft.
  2. Add the chopped tomatoes, sugar, salt, and pepper. Cook for a few minutes until the tomatoes are soft.
  3. Add the vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to blend the soup until smooth.
  5. Serve hot, garnished with fresh basil leaves.
