Ingredients

  • 4 cups vegetable broth
  • 1/4 cup miso paste
  • 1 block silken tofu, cubed
  • 1 cup seaweed, chopped
  • 1/2 cup scallions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated

Steps:

  1. Heat the vegetable broth in a large pot over medium heat.
  2. In a small bowl, mix the miso paste with a little hot broth to thin it out, then add the mixture back to the pot.
  3. Add the seaweed, garlic, and ginger and simmer for 5 minutes.
  4. Add the tofu and scallions, and cook gently for another 5 minutes.
  5. Remove from heat and serve hot.
