    Recipe Description

    These refreshing vegan Thai lettuce wraps are packed with flavors and textures. Made with tofu and crunchy veggies, wrapped in crisp lettuce leaves and served with a spicy-sweet peanut sauce, they are perfect for a healthy and light meal.

    Ingredients

    • 1 block of firm tofu, drained and crumbled
    • 1 tablespoon olive oil
    • 1 small red onion, diced
    • 2 cloves garlic, minced
    • 1 carrot, julienned
    • 1 bell pepper, julienned
    • 2 tablespoons soy sauce
    • 1 tablespoon maple syrup
    • 1 tablespoon lime juice
    • 1 teaspoon chili flakes
    • 1/2 cup peanuts, chopped
    • 1 head of lettuce, leaves separated
    • Fresh cilantro for garnish

    Steps:

    1. Heat the olive oil in a pan over medium heat.
    2. Add the onion and garlic, sautéing until soft.
    3. Stir in the crumbled tofu, carrot, and bell pepper. Cook for 5 minutes.
    4. Add the soy sauce, maple syrup, lime juice, and chili flakes. Cook for another 2 minutes.
    5. Remove from heat, and stir in the chopped peanuts.
