Recipe Description
Delicious and satisfying noodles tossed with a flavorful peanut sauce and crunchy vegetables, perfect for a quick and easy meal.
Ingredients
- 1/4 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1/2 cup cooked edamame
Steps:
- Cook the rice noodles according to package instructions, then rinse under cold water and drain.
- In a small bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, garlic, and ginger until smooth. If the sauce is too thick, add a little water to reach desired consistency.
- In a large bowl, combine the cooked noodles, bell pepper, carrot, edamame, and green onions.
- Pour the peanut sauce over the noodle mixture and toss well to coat.
- Serve garnished with chopped peanuts, cilantro, and a drizzle of sriracha or chili sauce if desired.
