Ingredients

  • 8 ounces rice noodles
  • 1/4 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 cup cooked edamame
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • Fresh cilantro for garnish
  • Sriracha or chili sauce, optional

Steps:

  1. Cook the rice noodles according to package instructions, then rinse under cold water and drain.
  2. In a small bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, garlic, and ginger until smooth. If the sauce is too thick, add a little water to reach desired consistency.
  3. In a large bowl, combine the cooked noodles, bell pepper, carrot, edamame, and green onions.
  4. Pour the peanut sauce over the noodle mixture and toss well to coat.
  5. Serve garnished with chopped peanuts, cilantro, and a drizzle of sriracha or chili sauce if desired.
