Recipe Description
This vibrant stir-fry combines crisp vegetables and tofu in a deliciously tangy sauce, served over fluffy rice.
Ingredients
- 1 block firm tofu, pressed and cut into cubes
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup pineapple chunks
- 2 cloves garlic, minced
- 1/4 cup sweet and sour sauce
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 2 tbsp water
- Cooked rice, to serve
Steps:
- Heat the vegetable oil in a large pan over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the bell peppers, onion, and garlic. Cook for 3-4 minutes, until the vegetables start to soften.
- Add the pineapple chunks to the pan and cook for another minute.
- In a small bowl, mix together the sweet and sour sauce, soy app, cornstarch, and water until smooth. Pour over the vegetables in the pan, add the tofu back to the pan, and stir well to combine.
- Cook for another 2-3 minutes, until the sauce has thickened and everything is heated through.
