    Vegan Ugandan Rolex

    Recipe Description

    A vegan twist on the classic Ugandan street food, featuring a chapati filled with delicious seasoned vegetables instead of eggs.

    Ingredients

    • 2 cups of sliced cabbage
    • 1 large carrot, julienned
    • 1 bell pepper, sliced
    • 1 onion, sliced
    • 2 tablespoons of vegetable oil
    • 1 teaspoon of curry powder
    • Salt and pepper to taste

    Steps:

    1. Heat the oil in a large pan over medium heat.
    2. Add the onion and sauté until soft.
    3. Add the cabbage, carrot, bell pepper, curry powder, salt, and pepper. Cook until the vegetables are tender.
    4. Place a quarter of the vegetable mixture on each chapati.
    5. Roll the chapatis tightly around the filling.
