Recipe Description
Indulge in a rich and creamy chocolate cheesecake that’s completely vegan. A decadent dessert that marries the luxuriousness of chocolate with the creamy texture of cheesecake, all without any animal products.
Ingredients
- 200g vegan digestive biscuits
- 100g vegan butter, melted
- 300g silk tofu
- 200g vegan cream cheese
- 150g dark chocolate, melted
- 100ml coconut cream
- 100g sugar
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
Steps:
- Crush the digestive biscuits and mix with the melted vegan butter. Press into the bottom of a springform pan and refrigerate.
- Blend silk tofu, vegan cream cheese, coconut cream, sugar, cocoa powder, and vanilla extract until smooth.
- Fold in the melted dark chocolate.
- Pour filling over the crust and smooth the top with a spatula.
- Bake at 160°C for 60 minutes or until set.
