Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 large sweet potato, peeled and cubed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 3/4 cup natural peanut butter

  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps:

  1. Heat olive oil in a large pot over medium heat.
  2. Saute onion, garlic, and ginger until the onion is translucent.
  3. Add sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to simmer.
  4. Cook until sweet potatoes are tender, about 20 minutes.

  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro.
