    Recipe Description

    Crispy on the outside and tender on the inside, these zucchini fritters are a delightful way to enjoy summer squash. Infused with fresh herbs and garlic, they’re perfect for a light meal or a savory side dish.

    Ingredients

    • 2 medium zucchinis, grated
    • 1 garlic clove, minced
    • 2 green onions, chopped
    • 1/2 cup all-purpose flour
    • 1 teaspoon baking powder
    • Salt and pepper to taste
    • Olive oil for frying
    • Fresh herbs for garnish

    Steps:

    1. Squeeze grated zucchini in a clean kitchen towel to remove excess moisture.
    2. In a bowl, combine zucchini, garlic, green onions, flour, baking powder, salt, and pepper.
    3. Heat olive oil in a pan over medium heat.
    4. Form small patties from the mixture and fry until golden brown on both sides.
    5. Drain on paper towels and garnish with fresh herbs before serving.
