    Ingredients

    • vegan puff pastry
    • coconut milk
    • sugar
    • cornstarch
    • vanilla extract
    • powdered sugar

    Steps:

    1. Preheat oven to 200°C (390°F).
    2. Roll out the vegan puff pastry on a lightly floured surface and cut into even rectangles.
    3. Place pastry rectangles on a baking sheet lined with parchment paper.
    4. Bake for 15 minutes or until golden brown and puffed.
    5. In a saucepan, heat coconut milk and sugar over medium heat until sugar is dissolved.
    6. Remove from heat and let the custard cool slightly.
    7. Pipe or spread the custard onto a pastry rectangle, layer another pastry on top, and repeat.
    8. Finish with a dusting of powdered sugar and a drizzle of vanilla glaze.
    9. Chill in the refrigerator before serving.
