Recipe Description

Ingredients
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 3 cans black beans, drained and rinsed
- 4 cups vegetable broth
- salt and pepper to taste
- 1 lime, juiced
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and red bell pepper. Cook until vegetables are softened, about 5 minutes.
- Stir in ground cumin and chili powder, cooking for another 1 minute.
- Add black beans and vegetable broth. Bring to a simmer and cook for 25 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Serve hot, garnished with fresh cilantro.
