    Recipe Description

    This Classic Vegan Pimento Cheese spread is a perfect blend of creaminess and spice, with a rich, indulgent texture that belies its dairy-free nature. Spread it on crackers, sandwiches, or use as a dip for a delightful snack.

    Ingredients

    • 1/4 cup nutritional yeast
    • 1 tablespoon lemon juice
    • 2 tablespoons pickled jalapenos, chopped
    • 1/2 cup pimentos, drained and chopped
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon smoked paprika
    • Salt and pepper to taste

    Steps:

    1. In a high-speed blender, combine soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, and smoked papica until smooth.
    2. Transfer the mixture to a bowl and fold in chopped pimentos and jalapenos.
    3. Season with salt and pepper to taste.
    4. Chill for at least an hour to allow flavors to meld before serving.
