Recipe Description

A unique vegan twist on traditional Jamaican Ackee and Saltfish, this Ackee and Tofu Scramble is a flavorful, nutritious start to your day. Packed with protein and bursting with tropical flavors, it’s a great way to wake up your senses.

Ingredients

  • 1 tablespoon coconut oil
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 tomato, chopped
  • 1 block (14 oz) of firm tofu, crumbled
  • 1 can (19 oz) ackee, drained and gently rinsed
  • 1 teaspoon turmeric
  • Salt and black pepper to taste
  • 1 green onion, chopped
  • 1 tablespoon fresh thyme

Steps:

  1. Heat coconut oil in a skillet over medium heat. Add onion, red bell pepper, and tomato. Sauté until onion is translucent.
  2. Add crumbled tofu to the skillet. Cook for 5 minutes, stirring occasionally.
  3. Gently fold in ackee, being careful not to break it up too much. Season with turmeric, salt, and black pepper. Cook for another 5 minutes.
  4. Sprinkle green onion and thyme over the scramble. Serve warm with some toasted whole grain bread for a complete meal.
