Ingredients
- 1 tablespoon coconut oil
- 1 small onion, chopped
- 1/2 red bell pepper, chopped
- 1 tomato, chopped
- 1 block (14 oz) of firm tofu, crumbled
- 1 can (19 oz) ackee, drained and gently rinsed
- 1 teaspoon turmeric
- Salt and black pepper to taste
- 1 green onion, chopped
- 1 tablespoon fresh thyme
Steps:
- Heat coconut oil in a skillet over medium heat. Add onion, red bell pepper, and tomato. Sauté until onion is translucent.
- Add crumbled tofu to the skillet. Cook for 5 minutes, stirring occasionally.
- Gently fold in ackee, being careful not to break it up too much. Season with turmeric, salt, and black pepper. Cook for another 5 minutes.
- Sprinkle green onion and thyme over the scramble. Serve warm with some toasted whole grain bread for a complete meal.
