    Savory and aromatic roasted potatoes seasoned with fresh rosemary, garlic, and a hint of olive oil, making a perfect vegan side dish to complement any main course.

    Ingredients

    • 4 large potatoes, cut into chunks
    • 2 tablespoons olive oil
    • 2 teaspoons fresh rosemary, chopped
    • 2 cloves of garlic, minced
    • Salt and pepper to taste

    Steps:

    1. Preheat the oven to 425°F (220°C).
    2. In a large bowl, toss the potato chunks with olive oil, rosemary, garlic, salt, and pepper until well coated.
    3. Spread the potatoes in a single layer on a baking sheet.
    4. Bake for 45 minutes or until the potatoes are golden and crispy, turning them halfway through the cooking time.
    5. Serve hot and enjoy!
