Ingredients

  • 2 20-ounce cans young green jackfruit in water, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 cup vegan barbecue sauce
  • 4 vegan hamburger buns, toasted
  • 1 cup cabbage slaw
  • Salt and pepper to taste

Steps:

  1. Rinse and drain the jackfruit. Use your hands to shred the jackfruit into pieces that resemble pulled pork.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Add the shredded jackfruit to the skillet along with the smoked paprika, ground cumin, and cayenne pepper. Stir to combine and cook for another 5 minutes.
  4. Pour the barbecue sauce over the jackfruit mixture and reduce the heat to low. Cover and simmer for 20-25 minutes, until the jackfruit is tender and the flavors have melded.
  5. Season the BBQ jackfruit with salt and pepper to taste.
