Ingredients

  • 500g okra (bhindi)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, thinly sliced
  • 2 tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander for garnish

Steps:

  1. Wash and dry the okra before slicing them into half-inch pieces.
  2. Heat oil in a pan and add cumin seeds. Once they start to splutter, add the onions and sauté until translucent.
  3. Add ginger-garlic paste and stir for a minute before adding chopped tomatoes. Cook until the tomatoes are soft.
  4. Add all the spices and salt to taste, mixing well.
  5. Add the chopped okra to the pan, stir well to coat the okra with the spices.
  6. Garnish with fresh coriander and serve hot.
