Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegan butter, cold and cubed
  • 1/4 cup organic sugar
  • 1/2 teaspoon salt
  • 1 cup brown sugar, packed
  • 1/2 cup maple syrup
  • 1/2 cup coconut cream
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped

Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, pulse together flour, vegan butter, sugar, and salt until crumbly. Press into the bottom of a greased 9×9 inch baking pan.
  3. Bake crust for 15 minutes until lightly golden. Remove from oven.
  4. In a saucepan over medium heat, combine brown sugar, maple syrup, and coconut cream. Bring to a simmer.
  5. Whisk cornstarch with 3 tablespoons of water in a bowl. Stir into the saucepan. Cook until the mixture thickens.
  6. Bake for 25 minutes, or until filling is set. Allow to cool before cutting.
