Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter, cold and cubed
- 1/4 cup organic sugar
- 1/2 teaspoon salt
- 1 cup brown sugar, packed
- 1/2 cup maple syrup
- 1/2 cup coconut cream
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
Steps:
- Preheat oven to 350°F (175°C).
- In a food processor, pulse together flour, vegan butter, sugar, and salt until crumbly. Press into the bottom of a greased 9×9 inch baking pan.
- Bake crust for 15 minutes until lightly golden. Remove from oven.
- In a saucepan over medium heat, combine brown sugar, maple syrup, and coconut cream. Bring to a simmer.
- Whisk cornstarch with 3 tablespoons of water in a bowl. Stir into the saucepan. Cook until the mixture thickens.
- Bake for 25 minutes, or until filling is set. Allow to cool before cutting.
