Ingredients
- 1 cup all-purpose flour
- 1/2 cup vegan margarine
- 1/4 cup ice water
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1/4 cup plant-based milk
- 1/2 cup raisins
Steps:
- 1. Preheat the oven to 375°F (190°C).
- 2. In a large bowl, combine flour and margarine until the mixture resembles coarse crumbs. Gradually add ice water until dough forms. Chill for 30 minutes.
- 3. Roll out dough on a floured surface and cut circles big enough to fit into a muffin tin. Press dough into tin forming small tart shells.
- 4. In a medium saucepan, combine brown sugar, maple syrup, cornstarch, vanilla, and plant-based milk over medium heat until thickened. Stir in raisins.
- 5. Fill each tart shell with the filling mixture.
- 7. Let cool before serving.
