    Ingredients

    • 1/2 cup vegan margarine
    • 1/4 cup ice water
    • 1/2 cup brown sugar
    • 1/4 cup maple syrup
    • 2 tbsp cornstarch
    • 1 tsp vanilla extract
    • 1/4 cup plant-based milk
    • 1/2 cup raisins

    Steps:

    1. 1. Preheat the oven to 375°F (190°C).
    2. 2. In a large bowl, combine flour and margarine until the mixture resembles coarse crumbs. Gradually add ice water until dough forms. Chill for 30 minutes.
    3. 3. Roll out dough on a floured surface and cut circles big enough to fit into a muffin tin. Press dough into tin forming small tart shells.
    4. 4. In a medium saucepan, combine brown sugar, maple syrup, cornstarch, vanilla, and plant-based milk over medium heat until thickened. Stir in raisins.
    5. 5. Fill each tart shell with the filling mixture.
    6. 7. Let cool before serving.
