    Ingredients

    • 2 tablespoons sugar
    • 1/2 teaspoon ground cinnamon
    • 1/4 cup plant-based butter, melted
    • 2-3 tablespoons cold water
    • 1 cup vegan ricotta
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/4 cup mini chocolate chips
    • Vegetable oil for frying

    Steps:

    1. In a mixing bowl, combine flour, sugar, and cinnamon. Add melted butter and mix until crumbly. Gradually add water until a dough forms.
    2. Roll out dough on a floured surface to 1/8 inch thickness. Cut into circles and wrap around cannoli forms.
    3. Heat oil in a deep fryer to 360°F (182°C). Fry shells until golden, about 2 minutes. Remove and cool.
    4. Mix vegan ricotta, powdered sugar, and vanilla until smooth. Stir in chocolate chips.
    5. Pipe filling into cooled shells. Dust with powdered sugar before serving.
