    Recipe Description

Inspired by the rich culinary heritage of Turkey, this Classic Vegan Çiğ Köfte recipe offers a delectable, plant-based take on the traditional spicy bulgur dish. Originating from the southeast regions of Turkey, Çiğ Köfte traditionally comprises raw meat, but this vegan rendition celebrates the textures and flavors of fine bulgur wheat, tomato paste, and a medley of aromatic spices. Key to its preparation is the vigorous kneading of ingredients, which amalgamates the flavors and softens the bulgur to perfection. Served with crisp lettuce leaves and a squeeze of lemon juice, this recipe provides a refreshing, delectable dish that honors its origins while embracing modern, plant-based culinary trends. Enjoy this vegan masterpiece as a testament to the adaptability and diversity of Turkish cuisine.

    Ingredients

    • 1 cup hot water
    • 1/2 cup tomato paste
    • 1/4 cup olive oil
    • 2 tablespoons pomegranate molasses
    • 1 tablespoon chili flakes
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • Salt to taste
    • Fresh parsley, chopped

    Steps:

    1. Combine bulgur and hot water in a large bowl. Cover and let sit for 20 minutes until bulgur is soft.
    2. Add tomato paste, olive oil, pomegranate molasses, chili flakes, cumin, paprika, and salt to the bulgur.
    3. Knead the mixture vigorously for at least 15 minutes, or until it becomes homogenous and the color turns uniformly red.
    4. Mix in chopped parsley and green onions.
    5. Form the mixture into small balls or patties.
