    A creamy, savory classic vegan corn pudding that blends the sweetness of corn with a silky smooth texture. Perfect for any festive gathering or as a comforting family side dish.

    Ingredients

    • 1 cup unsweetened almond milk
    • 2 tablespoons cornstarch
    • 1/4 cup sugar
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 1 tablespoon nutritional yeast (optional for a cheesy flavor)

    Steps:

    1. Preheat oven to 350°F (175°C).
    2. Blend 1 cup of corn with the almond milk, cornstatch, sugar, vanilla extract, salt, and nutritional yeast until smooth.
    3. Mix the blended mixture with the remaining corn kernels.
    4. Pour into a baking dish and bake for 45 minutes or until set.
    5. Let it cool slightly before serving.
