Ingredients
- 2 tablespoons vegetable oil
- 1 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 1/2 cup finely chopped celery
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon thyme
- 1/2 teaspoon oregano
- Salt and black pepper to taste
- 1 cup brown rice
- 2 1/2 cups vegetable broth
- 1 cup vegan ground meat
- 2 green onions, sliced
- 1/4 cup chopped fresh parsley
Steps:
- Heat the oil in a large skillet over medium heat. Add onion, bell pepper, and celery, and sauté until softened.
- Add garlic, smoked paprika, cayenne pepper, thyme, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Stir in the brown rice until well coated with the spice mixture.
- Add the vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 25 minutes, or until the rice is tender.
