This hearty vegan version of the traditional Brazilian stew, Feijoada, features a blend of black beans, smoked tofu, and a variety of aromatic vegetables and spices, simmered to perfection to create a warming and satisfying dish perfect for cozy evenings.

Ingredients

  • 2 cups black beans, soaked overnight
  • 200g smoked tofu, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 1 tsp smoked paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 6 cups vegetable broth
  • 1 tbsp olive oil

Steps:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Include carrots, bell pepper, tomatoes, and smoked tofu, cook for 5 minutes.
  4. Pour in soaked black beans, vegetable broth, smoked paprika, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 2 hours until beans are tender.
