This hearty vegan version of the traditional Brazilian stew, Feijoada, features a blend of black beans, smoked tofu, and a variety of aromatic vegetables and spices, simmered to perfection to create a warming and satisfying dish perfect for cozy evenings.
Ingredients
- 2 cups black beans, soaked overnight
- 200g smoked tofu, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 1 tsp smoked paprika
- 2 bay leaves
- Salt and pepper to taste
- 6 cups vegetable broth
- 1 tbsp olive oil
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until translucent.
- Include carrots, bell pepper, tomatoes, and smoked tofu, cook for 5 minutes.
- Pour in soaked black beans, vegetable broth, smoked paprika, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 2 hours until beans are tender.
